Butternut Squash Soup

I love fall, and even though it’s not yet fall here in NY state, there is a chill in the air at night, the apples are showing up at the farmer’s market as are those wonderful squashes that you can roast or as I did tonight you can make some absolutely wonderful soup. I just finished a bowl of this delicious soup and I am forcing myself not to go back and fill up again.

Butternut Squash Soup
6 tablespoons butter
4 carrots, rough chop
2 jalapeño peppers, seeded, membranes removed and rough chopped
8 cups chicken stock
1 cup cream
1 ½ cup onions, rough chop
2 potatoes, chopped
2 butternut squash, peeled and diced
Salt and Pepper to taste
Chives, chopped
Red Bell Pepper, diced
Roasted Pumpkin Seeds
Pumpkin Seed Oil

Sauté all veggies in butter until wilted, add chicken stock and simmer until veggies are soft. Puree soup until texture that you like, add cream if you like it creamier.

Garnish with chopped chives, red pepper, roasted pumpkin seeds and pumpkin seed oil.
